Dill seeds (Suva Dana)

Dill is a unique plant in that both its leaves and seeds are used as a seasoning. Dill's green leaves are wispy and fernlike and have a soft, sweet taste. Dried dill seeds are light brown in color and oval in shape, featuring one flat side and one convex ridged side.

The seeds contain so much calcium that 1 tablespoon contains 100 milligrams -- more than in 1/3 cup of milk.
Dill seed is a very good source of calcium, dietary fiber, as well as the minerals manganese, iron, and magnesium
Digestion: · Dill weed contains the carminative agent and aids with digestion by relieving intestinal gas, diarrhea and dysenteryGripe water is made with dill seed specifically as a remedy for colic in infants Dill Weed and Health Teas made with dill seed relieve indigestion and nausea, and produce a lulling effect.

Dill Seed is good sprinkled over casseroles before baking and used in salad dressings, mukhwas
These can be used in breads, stews, rices, root vegetable dishes and most notably, the making of pickles.
These seed heads, when combined with vinegars, garlic, sugar, salt, and pepper produce the dilled pickles that have that wonderfully puckery quality


Nutritious Pumpkin Soup


Ingredients

2 cups roughly chopped red pumpkin (bhopla / kaddu)
1 cup
roughly chopped carrots
1/2 cup
roughly chopped onions
1 tsp
dill seeds (suva dana)
1/4 cup
low fat milk
1 tsp
oil
1/4 tsp
salt
freshly ground pepper to serve


Method
Heat the oil in a pressure-cooker; add the dill seeds and sauté for about 30 seconds.
Add the onions and sauté for a few minutes till they turn translucent.
Add the pumpkin and carrot and sauté for a few more minutes.
Add 4 cups of water and pressure cook for 2 whistles.
Purée the mixture in a blender till smooth.
Pour into a saucepan, add the milk and salt and bring to a boil. Keep aside.
Just before serving, reheat, add a little pepper and serve hot.

Today it is FENNEL SEED (SAUNF)




Fennel Seed
Also know as ANISEED / SAUNF. In India, the seeds are often chewed after a meal, both as a digestive and to sweeten the breath
Not only loaded with powerful antioxidants fennel also contains fiber, folate, potassium, and vitamin C. It is believed to boost the immune system, reduce blood pressure, and aid in detoxification of the body. It contains compounds that help relieve smooth muscle spasms, which in effect, helps ease abdominal cramping, menstrual cramps and spasms. Fennel is also a mild appetite suppressant. it is also helpful for problems like flatulence, colic and bloating that comes from gas.

Uses in daily cooking
Can be added to dal, paratha, soup,  pickles,  laddu along with methi
Can be used in fish and chicken preparation, roasting the seed until it gives off an aroma, then grind it and uses it as the main spice. It’s all quite wonderful.
Sherbath made with aniseed.
Saunf powder is widely used in kashmiri cusine.




SAUNF PANEER

Ingredients
1 large cup of paneer, cubed
1 teaspoon saunf (fennel seeds)
1 onion, sliced
7 methi (fenugreek) seeds
1 tsp kalonji (black onion seeds)
½ tsp jeera (cumin seeds)
¼ tsp hing (asafetida)
¼ tsp mustard seeds


 Method
Mix all the ingredients, except paneer and onions, and throw into a tablespoon of moderately hot olive oil in a small wok.
When seeds crackle and release aromas, add onion and sauté till translucent.
Add the paneer and ½ tsp turmeric powder and ½ tsp red chilli powder. Toss.
Add black salt to taste.
Sprinkle with chopped parsley or coriander

Raw papaya benefits


Papaya is regarded as a wholesome fruit. It is the plant form of vit A and is enriched with Beta-carotene, contains large amounts of vit C.
The vitamin C content in papaya increases as the maturity progresses. Its carbohydrate content is mainly of invert sugar which is a form of predigested food.

Intestinal Disorders

Papaya is an ideal choice of fruit for those who are suffering from digestive ailments and dyspeptic patients since it is easily digestible, it is high in fibre,low calories and enriched with water content. Papain in the raw papaya is highly beneficial in the deficiency of gastric juice, excess of unhealthy mucus in the stomach and intestinal irritation. The ripe fruit, if eaten regularly, corrects habitual constipation, bleeding piles and chronic diarrhea.
Tenderise meat
Raw papaya is used in food industry to tenderise meat because it is a rich source of papain, a plant pepsin. Pepsin is an enzyme produced in animals to digest protein.

Skin Disorders

Juice of green, raw papaya is also used externally to improve complexion and treat skin blemishes. Ripen papaya paste is used as face pack to improve the colour and moisture.
The juice of the raw papaya, being an irritant, is useful in several skin disorders. It is applied with beneficial results to swellings to prevent pus formation or suppuration and to corns, warts, pimples, horn, an excrescence or an abnormal outgrowth of the skin and other skin diseases.

Menstrual Irregularities

The unripe papaya helps the contraction of the muscle fibres of the womb and is thus beneficial in securing proper menstrual flow

Throat Disorders

Fresh juice of raw papaya mixed with honey can be applied with beneficial results over inflamed tonsils for diphtheria and other throat disorders. It dissolves the membrane and prevents infection from spreading.

Raw papaya salad
Ingredients
• 1 Cup raw papaya (grated)
• 1 med sized tomato chopped
• 1 tbsp Coriander leaves, chopped
• 1/2 tsp Mustard seeds
• 1 tbsp Lemon juice / vinger
• 2 Green chilies (slit length wise)
• Salt to taste


Method
Mix all the above ingredients , slightly pound green chillies with the pounder to get the tangy flavour.

NUTRITIOUS SNACKS FOR KIDS


● Cut a papaya into square pcs, chop some dates, sprinkle with peanuts, almonds or cashewnuts. Your nutritious papaya treat is ready.
● Peel and cut some carrots. Put them in your mixer-grinder add honey, sugar, cardamom and nutmeg pd along with milk. A delicious healthy milkshake is ready.


● Whip curds with an egg beater. Pour it in a fancy glass bowl add pomegranate, a dash of salt and pepper and finely chopped capsicum pcs and your curd craze is ready.

● Add dates, a little dry fruits like almonds, walnuts, anjir, kismis and also fruits like pomogranate, grapes to kurmura bhel and make it nutritious and antioxidant rich.
● Pattice of leftover veg.
● Soak mushroom in water, drain n sauté lightly in a non-stick fry pan adding capsicum, green onion salt and pepper
● Soak some rotis in milk for sometime, add jaggery, stir on fire till milk thickens and jaggery melts. Chop and top with sliced almonds.
● On a low fire add some til seeds, jaggery and chopped mixed dry fruits. Roll into small balls when slightly warm, good chocolate substitute is ready.
● Milk substitute – basundi, kheer, milkshakes, custard, pudding, shrikand, fruit yoghurt, cheese, panir, raitas.

Digestion and the dangers of cheap protein powders


Some of you may think the word ‘dangers’ is a bit harsh for a title about protein powders. Whilst writing this section I’m going to describe how the body uses protein and how certain manufacturing processes change the proteins molecular structure  denaturing it. This leads to the body not recognising your protein intake.

Protein is an essential part of our diet for growth and repair and even more so for athletes and bodybuilders whose bodies need to repair at a much faster rate than the average person’s. To meet this demand, protein supplements are a great way to boost your diet conveniently. However… does the quality of the protein matter? Oh, yes! It really does!

How does your body use protein?

How does your body use protein?
The digestive system is very complex. However, here’s a little information for you to get an idea of the process.

Once you ingest your protein shake the hydrchloridic acid in your stomach starts breaking it down from the protein into amino acids, as this is what is used in the body; the whole protein structure is too large for the body to use.

Shortly after this, your pancreas injects an alkaline solution with enzymes to break down the protein even further. Your body needs the protein to revert back to amino acids when they can be used again as single amino acids. So the role of protein in food is not to provide our bodies with proteins directly, but to supply the amino acids from which the body can make its own proteins.

How cheap protein damages the intestines
The real magic takes place in the intestines. Having good digestion is the secret to good health, allowing you to maintain constant energy levels and digesting all the protein you eat.

You have about 3 lb to 4 lb of probiotics bacteria living in your intestine  – they’re the good guys. The word ‘Probiotics’ simply means ‘for life’, which explains why good nutrients are so important. The probiotics are in charge of making use of your foods and adding what’s missing to your diet, like any Vitamin B Complexes and nonessential amino acids. This is a very delicate part of your digestion and can be easily upset.

The best environment for probiotics to do their work is an alkaline one! But what happens with cheap proteins is that they create an acidic environment. This happens because cheap proteins cross-link – so they have thousands more bonds for the enzymes and probiotics in your intestines to break down, and are a lot harder to digest. This results in the protein lining your intestines and going off, creating an acidic environment!

This acidic environment changes the natural flora of your intestines and allows all the other microorganisms in the intestines that the probiotics usually keep in check – Candida, E.coli and salmonella, for instance – to grow. And in some bad cases pathogens build up to such a vast amount they can break through the intestine causing all manner of symptoms and illnesses, like sore joints, depression, allergies, kidney problems, etc.

Here’s a summary of what probiotics do in an alkaline environment:
  • Inhibit the growth of harmful bacteria that cause digestive stress
  • Improve digestion of food and absorption of vitamins
  • Stimulate the body’s natural defence mechanism – the immune system
  • Help make vitamins needed by the body
Finally, the digested nutrients are absorbed through the intestinal walls and transported throughout the body.

How do cheap protein powders effect your digestion?
In most protein manufacturing practices all the good nutrients that were in the protein get killed off. When protein is processed too fast and at a high temperature it’s denatured. What’s left is very hard for the body to digest. All the enzymes which naturally occur in the protein are gone, and the protein’s shape is different, leaving it difficult for the body to digest.

So what happens to 30 g of cheap protein taken three to six times a day? Well, mostly nothing – but it can contribute to intestinal toxaemia. This condition is caused by the cheap protein deposited in your intestinal track turning into a black layer of sludge, hindering the absorption of protein into your body where you want it. Stuck, unable to move and slowly building up on itself, the protein goes off, causing bloating and nasty wind smells.
Most people put the nasty smells that comes with high protein diets down to the protein, but in fact it’s the harmful microorganisms (bacteria) multiplying and creating waste in your gut that causes the smell. Bacteria start to grow out of control in your intestines, creating acidosis and prohibiting your nutrients from being absorbed.

When people start using cheap proteins, sure, they might experience what seems to be an increase in mass – but it’s not quality muscle! An extra pound on the scales doesn’t mean it’s extra pounds in muscle. What’s actually happening is the weight is being built up in your intestines as undigested protein.

How does cheap protein affect the body’s pH level affect?
The pH of your body is very important. Doctors and scientists around the world have listed up to 200 different degenerative illnesses and diseases linked to acidosis.

The pH of your body comprises an acid and alkaline level, measured between 1 and 14. This is becoming the main focus of attention in the recovery and prevention of illness and disease resulting from acidosis (acidic state of the body). If there’s an imbalance in your body’s pH, this can negatively affect the health of all your body’s systems, such as circulatory, urinary, endocrine, immune, lymphatic, muscular, nervous, reproductive, respiratory, skeletal, and, most importantly, digestive system

The pH of your body is just as important as a stable body temperature of 37 degrees. The pH of your bloodstream is just as sensitive, and needs to be a stable pH of 7.34 to quite literally stop the cells of your body corroding!

In the worst cases, they become starved of oxygen, creating a breeding ground for cancer and other diseases.
